Drum roasting uses metal contact + smoke.
Smoke sticks. Oils heat unevenly. Beans need 10–14 days to balance.
Air roasting uses clean hot air only.
Beans roast evenly. No smoke. No burnt spots. No waiting game.
If X then Y:
If your coffee tastes sharp on day 1 → wait 48 hours
If it still tastes sharp → use slightly cooler water
If it tastes flat → increase dose by 1–2 grams
