The real question isn’t “Is this coffee fresh?”
It’s how fresh coffee beans should be when you buy them — so you control when they taste best.

Decision rule:
No roast date = no buy
“Best-by” only = walk away slowly
Coffee releases gas after roasting. That’s normal. That’s good.
General starting points:
Espresso: 7–14 days
Pour-over / drip: 4–10 days
Darker roasts: rest a little less
Lighter roasts: rest a little more
If X then Y:
If coffee tastes sour → wait 2 more days
If coffee tastes flat → you waited too long
There is no single “right” day.
There is only your right day.
